  • ½ C. peanut butter
  • ½ C. + 2 T. coconut oil, melted
  • ¾ C. maple syrup
  • ½ tsp. vanilla extract
  • ½ C. rolled oats
  • 2 C. oat four
  • Dash salt
  • ¾ tsp. cinnamon
  • 2 C. dark chocolate chips
  • 1 C. salted peanuts, chopped

Preheat oven to 350 degrees. In a bowl, combine oats, oat flour, salt, and cinnamon; set aside. In a separate bowl, use an electric mixer to combine peanut butter, ½ cup of coconut oil, maple syrup, and vanilla until smooth. Fold in dry ingredients and half of your peanuts and spread mixture into a greased baking pan. In a saucepan, melt chocolate chips with remaining coconut oil until smooth; mix in remaining peanuts and pour over peanut butter layer. Bake for 20 minutes until cooked through. Cool in refrigerator before serving.
