  • 4 lb. russet potatoes, peeled and cubed
  • 1 C. milk
  • 1 stick butter, melted
  • 1 ½ C. mozzarella cheese, shredded
  • 1 C. Parmesan cheese, grated
  • Salt and pepper to taste

Preheat oven to 400 degrees. In a large pot, add potatoes and cover with water. Boil for 15 minutes until tender and drain. Transfer potatoes to a large bowl, mash with butter, and mix in milk, mozzarella, Parmesan, salt, and pepper. Spread potatoes into a greased baking dish and bake for 20 minutes until the top is golden brown.
