This carrot feta zucchini fritter recipe comes out thick and full of flavor. Serve it with some sour cream and you’ll be in for a pleasant surprise.

  • 2 C. zucchini, grated
  • 5 T. flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 red bell pepper, diced
  • 5 T. Feta, crumbled
  • 1 C. carrot, grated
  • 3 eggs
  • ½ C. olive oil to fry

Heat the olive oil in a skillet. In a bowl, coat the carrots and zucchini in the salt for 5 minutes or so. Remove them from the bowl to get rid of any excess water. Whisk the eggs in a bowl. Add the flour, zucchini and carrots, red bell peppers, feta, salt and baking powder. Mix well. Drop a spoon full of batter into the hot skillet. Fill the skillet and let them cook until they are golden brown on both sides. Place them onto a paper towel covered plate. Use up all of your batter and repeat the process. Enjoy with you favorite dipping sauce.
