  • 1 loaf French bread, sliced ¾ inch thick
  • 4 eggs
  • ¾ C. heavy whipping cream
  • ½ C. pureed pumpkin
  • 2 T. sugar
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. ground cloves
  • Dash salt
  • ½ C. pumpkin seeds, chopped
  • Maple syrup

Preheat oven to 350 degrees. Spread pumpkin seeds out on a baking sheet and toast for 10 minutes; set aside. In a large bowl, whisk together eggs, cream, pumpkin, sugar, vanilla, cinnamon, nutmeg, cloves, and salt. Heat a skillet coated with cooking spray over medium heat. Dip bread slices into mixture and allow to soak evenly on both sides. Transfer to skillet and cook for about 2 minutes on each side until golden brown. Serve with hot maple syrup and sprinkle toasted pumpkin seeds on top.
