This white bean soup might be a little different than what you’re used to. The beans are pureed to make a thick broth with savory ham folded in. The two flavors of the beans and ham go so well together you won’t be able to stop eating this!

  • 2-3 lbs. Smoked hamhock
  • 1 C. smoked ham, shredded
  • 2 ½ C. white beans, canned
  • 2 qt. water
  • 1 Tbs. butter
  • 1 small onion, diced
  • 1 large carrot, chopped
  • 3 cloves of garlic, minced
  • 2 tsp. Italian seasoning
  • Salt and pepper
  • Fresh parsley, chopped
  • 1 C. croutons
  • 1-2 tsp. hot sauce

Boil the ham hock and Italian seasoning in 8 C. of water. Bring it to a boil and then let it simmer for 90 minutes. Melt the butter in a large sauce pan and saute the onions and garlic. Add the carrots and saute until tender (about 15 minutes). Add in the beans and ham broth. Season with salt and pepper. Add the hot sauce and salt and pepper to taste. Puree the soup in a blender (or using an immersion). Stir in the shredded ham and let it continue to simmer for an hour. Garnish with parsley and croutons.
