Try out these quick and easy enchiladas for dinner this week. These simply seasoned beef enchiladas are topped with extra gooey Monterrey Jack cheese.

  • 2 cans enchilada sauce
  • 1 lb. ground beef
  • 1 onion, diced
  • Salt and pepper to taste
  • Flour tortillas
  • 3 C. Monterrey Jack cheese, shredded
  • Parsley for garnish

In a skillet, brown beef until no longer pink. Add in onion and sauté until softened; season with salt and pepper. Pour half of a can of enchilada sauce into the beef mixture, stir well, and heat through. Spoon mixture into flour tortillas, roll up, and place along the bottom of a greased baking dish. At this point, you can cover and freeze the dish if you are making ahead. Top with remaining sauce and cheese. Bake for 20 minutes at 350 degrees until bubbly. Garnish with fresh parsley.
