  • 2 onions, thinly sliced
  • 2 C. buttermilk
  • 2 C. flour
  • Salt and pepper to taste
  • ½ tsp. cayenne pepper
  • Canola oil for frying

In a baking dish, spread out your onion slices and cover with buttermilk. Let soak for at least one hour. In a bowl, combine flour, salt, pepper, and cayenne. Heat 3 to 4 cups of oil in a pot or Dutch oven until shimmering (about 375 degrees). Use tongs transfer onion slices from buttermilk to flour mixture to evenly coat, and then into oil. After a minute or two when the onions are golden, remove and move to a plate line with paper towels to drain.
