Thin Mint Chocolate Mousse Pie
- 1 ready made chocolate graham cracker crust
- 2 C. heavy whipping cream
- 1 lg. pkg. Instant chocolate fudge pudding mix (made according to PIE instructions on the box)
- 1 box Thin Mint Girl Scout cookies
Prepare Instant Fudge pudding mix according to directions on box for Pie. Whip heavy cream until very stiff peaks form. Gently fold pudding into whipped cream until completely combined. Spoon pudding and whipped cream mousse mixture into pie crust. Stick Thin Mint Cookies about an inch apart around the rim of pie crust in the mousse so half is showing on top so it looks sort of like a crown on top of the pie. Crumble the rest of the cookies and sprinkle evenly inside the middle of the crown of cookies. Slice so that each slice has a cookie.
