Thousand Island Chickpea Mason Jar Salad

Ingredients
- Romaine lettuce
- 1 red onion
- 1 cucumber, cubed
- 1 tomato, cubed
- 1/2 melon, cubed
- 1 frozen bag of corn kernels
- 1 tsp salt
- Chickpeas
- 1/4 C Thousand Island dressing

Directions
Bring water to a boil. Add salt and corn kernels. Boil for one to three minutes, or until tender and not mushy. Place corn kernels in drainer to get rid of excess water.
Wash all produce. Slice onion into rings, and cut tomato, cucumber and mango into cubes.
Pour Thousand Island dressing into mason jar. Layer chickpeas and corn kernels on top of dressing. Then stack onion rings, mangos, cucumbers, tomatoes and lettuce. Serve chilled.
