Three Potato Salad

White, red, and a little sweet potato create a completely different potato salad.

Ingredients

  • 6 white potatoes, cubed
  • 6 red potatoes, cubed
  • 1 sweet potato, cubed
  • 2 cinnamon sticks
  • 1 red bell pepper, diced
  • 6 hard boiled eggs, cooled & diced
  • 1 C. celery, diced
  • 1/2 C. green onions, diced
  • 3 Tbs. chunky dill relish
  • 1 1/2 C. mayonnaise, light
  • 2 Tbs. honey mustard to taste
  • salt & pepper

Directions

In one pan, add white & red potatoes & cook until tender. In a separate saucepan, cook cubed sweet potatoes with the cinnamon sticks until tender. Do not overcook. Check by placing a fork into a potato. If it can be broken easily it is done to perfection. When potatoes are cooled add in a big bowl with all of the other ingredients and mix well. For garnish, top with additional green onions, chill & serve.

  • Oh my gosh, they probably forgot where they found it. l have always been told that copying you is the truest form of flattery. And it is a good recipe, but I do mine a bit different. I prefer extra virgin olive oil and unseasoned rice vinegar and NO dill relish, no mayonaise and no mustard, less it is the plain powdered type. Also, I like four Yukon Gold, four red & four white or yellow potatoes.
