Thumbprint Cookies
Ingredients
- 3/4 C. margarine, softened
- 2 Tbs. sugar
- 1 1/2 tsp. low-calorie sugar substitute
- 1 egg
- 1/2 tsp. vanilla
- 2 C. flour
- 1/4 tsp. baking powder
- 1 Tbs. poppy seed
- 1/2 C. low sugar preserve or spread
Directions
In a bowl with hand mixer, cream margarine and low-calorie brown sugar. Beat in egg, vanilla. Stir in flour, baking powder and poppy seeds. Shape into a ball, cover and chill about 30 minutes. Preheat oven to 350 degrees. Shape dough into 24 balls. PlaceĀ 1 inch apart on ungreased baking sheet. Press thumbprint in center of cookie, make a deep indentation. Bake 15 minutes, then remove from oven. Fill each with a tap of preserves and return to oven for 3 minutes. Cool on cookie sheet 10 inutes. Transfer to wire rack and cook completely.
