Tilapia Saute

This is an easy dish that manages to be creamy without being overwhelmingly heavy. Very flavorful without a lot of work.

  • 4-6 tilapia fillets
  • 1 Tbs. olive oil
  • 1/4 C. grated Parmesan cheese
  • 1 Tbs. dried parsley flakes
  • 1 tsp. garlic powder
  • 2 Tbs. butter or margarine
  • 1 Tbs. fresh. lemon juice

Mix the parmesan cheese, garlic powder, parsley flakes in a small bowl; set aside. Heat a large skillet and add the olive oil, butter, and lemon. Sauté the fillets 2-3 minutes per side until white and flaky. Sprinkle the cheese mixture on fillets and sauté each side for another minute, then serve.

Yield: 4 servings
