This was a regular at our house. Served with a salad and crusty garlic bread - it is definitely a winner.

Ingredients

  • 2 lb. ground beef (or whichever meat or poultry you prefer)
  • 1 small onion, diced
  • 3 grinds black pepper, divided
  • 1 can sliced mushrooms, diced or fresh
  • 2 C. prepared tomato sauce
  • 1 16 oz. container reduced fat ricotta
  • 1 egg, beaten or imitiation egg
  • 8 oz. shredded reduced fat mozzarella, divided
  • 1/2 tsp. onion powder
  • 2 pkg. frozen spinach, defrosted and squeezed dry
  • 1/2 C. grated parmesan, divided
  • Pinch salt

Directions

Add ground meat to skillet and sauté until half cooked. Add 2 grinds pepper, mushrooms and onion sautéing for about 5 minutes. Drain off excess fat and add tomato sauce. Saute about another 5 minutes. Set aside to cool.

In a separate bowl, combine ricotta, egg, 1/2 mozzarella, onion powder, spinach, salt, 1 grind pepper.

Spray a rectangular casserole dish with Pam or another type you prefer. Make rows of the ricotta mixture alternating with meat mixture until everything is used up. Sprinkle with remaining mozzarella and parmesan.

Bake at 350 degrees until heated through and bubbly. Serve with garlic bread!
