- 1 C. Fat Free Half-and-Half
- 1/4 C. Granulated Sugar
- 8 oz. Ricotta Cheese
- 1 Tbs. Unsweetened Cocoa Powder, plus additional for dusting
- 1 Tbs. Coffee Liqueur
- 1/2 tsp. Instant Espresso Powder
In a food processor or blender, process the fat free half-and-half and sugar until mixture has stiffened. Transfer whipped cream to a medium bowl and set aside. In the same food processor or blender, puree the ricotta, 1 tablespoon of cocoa powder, coffee liqueur, and instant espresso powder until well-blended. Fold cheese mixture into whipped cream. Spoon even amounts of the cream into dessert glasses or mugs, dust with cocoa powder, and serve.
