  • ½ lb. elbow macaroni, cooked and drained
  • 6 T. butter, divided
  • 3 T. flour
  • 1 T. powdered mustard
  • 3 C. milk
  • ½ C. onion, diced
  • 1 tsp. paprika
  • 1 egg
  • 1 ½ C. cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 C. panko breadcrumbs

Preheat oven to 350 degrees. In a saucepan, melt 3 tablespoons of butter and whisk in flour and mustard powder until smooth. Add in milk, onion, and paprika; bring to a boil, reduce heat, and simmer for 10 minutes. Beat the egg in a large bowl. Temper egg by pouring in a small bit of your milk mixture while whisking constantly at a time (otherwise you will end up with scrambled eggs!). Once everything is combined, stir in cheddar, salt, and pepper until cheese has melted. In a greased casserole dish, toss macaroni with sauce. Melt the remaining 3 tablespoons of butter, combine with breadcrumbs, and sprinkle over casserole. Bake for 30 minutes until golden.
