Ingredients

  • For the Pies:
  • 1 1/2 C. sugar
  • 1/2 C. butter, at room temperature
  • 2 eggs
  • 1/4 C. vegetable oil
  • 1 1/2 tsp. vanilla extract
  • 3 C. all purpose flour
  • 1 C. dutch processed cocoa powder
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 C. whole milk
  • For the Filling:
  • 1/2 C. shortening
  • 1 1/2 C. powdered sugar
  • 1 C. marshmallow creme
  • 8 marshmallows, toasted
  • salt
  • 1/2 tsp. vanilla extract
  • 1/4 C. whole milk

Preheat your oven to 350°F. Line 2 cookie sheet with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar, butter, and eggs on low-medium speed until the combined about 2 minutes. Add the vegetable oil, vanilla, and beat for 1 minute. In a large mixing bowl, add the flour, cocoa, baking powder, baking soda, salt, and whisk until the ingredients are combined. With your mixer on low-medium, add half of the dry ingredients to the wet ingredients and beat until the ingredients blend about 1 minute. Pour in half of the milk and beat for 30 seconds. Add the rest of the dry ingredients to the mixing bowl and beat until combined about 1 minute. Add the rest of the milk and beat until all the ingredients are combined. With an ice cream scoop or 1/4 cup measuring cup, scoop out 8 circles of batter onto a baking sheet. Bake for 10 minutes and place on a cooling rack. Prepare the next baking sheet in the same manner. Let the cakes reach room temperature before frosting. For the filling, in the bowl of a stand mixture fitted with the paddle attachment, add the shortening, powdered sugar, marshmallow creme, toasted marshmallows, salt, and vanilla extract. Beat on medium until the ingredients combine, about 1 minute. Add the milk and mix for 30 seconds until the frosting becomes nice and creamy. Assemble whoopee pies and serve.
