Bruschetta is a classic appetizer that is simple and easy to make, but looks amazing for your guests! If you won't be serving this dish for several hours, allow the guests to top their baguette themselves by serving the tomato mixture on the side.

  • 5 tomatoes, seeded and chopped
  • 2 Tbs. Kalamata olives, chopped fine
  • 1/4 C. oil
  • 3 cloves garlic, minced
  • 1 Tbs. balsamic vinegar
  • 1/8 C. fresh basil leaves, chopped
  • 1/2 tsp. basil
  • 1/4 C. onions, chopped fine
  • 1/2 tsp. salt
  • 1 pinch pepper
  • fresh Parmesan cheese, grated
  • baguette, sliced and toasted

Combine all the ingredients except for the cheese and bread. Chill in the fridge for at least 20 to 30 minutes before serving to allow the flavors to combine. Toast the baguette slices and top with the tomato mixture. Sprinkle with the cheese and serve.
