  • 2 C. wild rice
  • 4 C. vegetable stock
  • 2 T. butter
  • 1 T. canola oil
  • 3 shallots, diced
  • ¼ C. celery, chopped
  • ½ C. raisins or dried cranberries
  • ½ tsp. dried thyme
  • Salt and pepper to taste
  • ½ C. toasted pecans, chopped

Preheat oven to 375 degrees. In a saucepan, bring vegetable stock to a simmer. In a large skillet, melt butter with oil and sauté shallots and celery until tender. Stir in rice, stir to evenly coat, and cook for a few minutes. Pour in your vegetable stock and add thyme, salt, and pepper. Transfer to a greased baking dish, cover, and bake for 45 minutes until liquid in completely absorbed. Stir in pecans and serve.
