  • 1 (10 oz.) can cream of chicken soup
  • 1 C. sour cream
  • 1 onion, diced
  • ½ stick butter, melted
  • Salt and pepper to taste
  • 1 (32 oz.) package frozen cubed potatoes
  • 2 C. cheddar cheese, shredded
  • ½ C. pine nuts
  • 1 T. olive oil
  • 2 cloves garlic, minced

In your crockpot, combine cream of chicken soup, sour cream, onion, butter, salt, pepper, potatoes, and half of the cheddar cheese. Cover and cook on low for 4 hours. On a baking sheet, toss pine nuts with oil and garlic; bake for 10 minutes at 375 degrees to toast. Stir pine nuts and remaining cheese into the crockpot and cook for an additional 30 minutes to an hour.
