Tofu Chalupas
Ingredients
- Vegetable cooking spray
- 1/3 C. onion, finely chopped
- 1 (10 1/2 oz.) package tofu, drained and crumbled
- 2 cloves garlic, crushed
- 2 tomatoes, seeded and chopped
- 1 jalapeno pepper, seeded and chopped
- 1/4 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. dried whole oregano
- 2 Tbs. fresh cilantro, chopped
- 4 - 6-inch corn tortilla
- 1/2 C. iceberg lettuce, shredded
- 1/2 medium avocado, peeled and chopped
- 1/4 C. shredded Cheddar cheese
Directions
Coat a large skillet with cooking spray; place over medium heat until hot. Add onion and sauté until tender. Add tofu and garlic, and cook for 3 minutes, stirring constantly. Stir in tomatoes, pepper, chili powder, cumin, oregano, and cilantro, and continue to cook over medium heat, stirring frequently, until thoroughly heated. Wrap tortillas in aluminum foil, and bake at 350 degrees for 10 minutes or until thoroughly heated. Top each tortilla with 1/4 of lettuce, tofu mixture, avocado, and cheese. Serve immediately.
