This delicious tofu fried rice is just the thing you need. It is done in less than 30 minutes, which makes it a great meal to make when you don't have a lot of time. Tofu makes a great meat substitute, you have to try it out and taste the greatness.

  • 1 C. instant rice
  • 1- 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1/2 onion, chopped
  • 1 carrot, diced
  • 1/2 C corn kernels
  • 1/2 C peas
  • 2 Tbs. soy sauce
  • 1 pkg. tofu

Cook the rice according to package directions.

Heat oil in a skillet. Add garlic, onion and carrots and cook for about 2 minutes. Add peas and corn kernels and cook for 2 minutes.

Add the rice, soy sauce and tofu and cook for 2 or 3 minutes, or until rice is hot.

Serve warm.
