Tofu Scrambles

This simple vegetarian dish is great for breakfast!

  • one 16-oz. tub soft or silken tofu
  • 1 1/2 Tbs. margarine
  • pinch of curry powder or turmeric
  • salt and pepper to taste

Crumble tofu in mixing bowl.  Heat margarine in a skillet and add tofu.  Sprinkle in curry powder.  Cook over medium-high heat, stirring frequently, until liquid cooks off and mixture has a scrambled egg consistency.  This should take about 8 to 10 minutes.  Season with salt and pepper and serve.
