This is a perfect breakfast to start your day with. The melted cheese and veggies make this frittata even more tasty and it's super easy to whip up!

Serving Size / Yield

1 frittata


  • 1 C. sliced onions
  • 1 1/2 tsp. olive oil
  • 1 tomato, diced
  • Salt
  • Pepper
  • 3 Tbs. Parmesan cheese
  • 3 eggs
  • 1 Tbs. water
  • 1/2 tsp. onion powder
  • arugula, for topping (if desired)

In a skillet, sauté the onions. Add the tomatoes, salt and pepper and continue to cook for 4 minutes. Place in a bowl and let it cool off to the side. Beat eggs, water and Parmesan cheese and pour the mixture into a skillet. Pour in veggies and cook over low heat. After eggs are set but still runny on top heat broiler. Sprinkle remaining Parmesan cheese on top and broil until it is golden brown and bubbly.
