Tomato and Cheese Filled Focaccia

These are good served while they are still warm but they make a great picnic lunch served cold. Give them a try, you'll love them!

Ingredients

  • 1 C. Provolone Cheese, shredded
  • 1/4 C. Parmesan Cheese
  • 1 tsp. Italian Seasoning
  • 1/8 tsp. Black Pepper
  • 1 Loaf Focaccia Bread
  • Olive Oil
  • Tomato Slices

Directions

Combine all ingredients except Tomatoes. Cut the Focaccia Bread into two layers. Place the bottom piece on a cookie sheet. Brush it with Olive Oil and cover with tomato slices. Sprinkle with the cheese mixture. Place the top onto the loaf and brush with Olive Oil. Sprinkle with 1 Table spoon Parmesan Cheese and 1/2 tsp. Italian Seasoning. You can add your favorite meat if you like. Chicken works especially well. Bake at 350 degrees F for 10 minutes or until the cheese is melted. Cut it into wedges and serve hot or cold.
