  • 2 lb. persian cucumbers, coarsely chopped
  • 1 bunch, chopped scallions
  • 1/2 C. fresh mint, coarsely chopped
  • 1 C. kalamata olives
  • 2 large chopped tomatoes
  • 7 oz. pack, crumbled feta
  • 6 Tbs. olive oil
  • 1/4 C. fresh lemon juice
  • black pepper
  • kosher salt

Take a large bowl and pour the cucumbers, olives, and scallions, and mix well
Add in the chopped tomatoes and the chopped fresh mint, and half of the crumbled feta into the mixture, and combine well
For dressing, take a small bowl and whisk together the lemon juice and the oil
Season the dressing with black pepper and salt, to taste
Once the dressing is prepared, pour it over the salad and toss well to coat
Season the salad with pepper and salt
Once the salad is ready, sprinkle the remaining feta over it, and serve
