  • 1 loaf French baguette, sliced into 1-inch slices
  • 8 Roma tomatoes, seeded and chopped
  • 4 Tbs. parsley, chopped
  • 4 Tbs. basil, chopped
  • 3 Tbs. red wine vinegar
  • 3 Tbs. olive oil
  • salt, to taste
  • pepper, to taste
  • 2 lb. feta, cubed

Combine all the ingredients except the bread in a large bowl and toss to combine. Allow to sit.

Toast the bread slices under the broiler for about 2 minutes or until crisp. Top the bread slices with the tomato mixture just before serving.
