  • 2 shallots, finely chopped
  • Oil
  • 2 cloves garlic, finely sliced
  • 9 oz. cherry tomatoes
  • 1 sprig thyme, leaves picked
  • 2 (14 oz.) cans cannellini beans, drained and rinsed
  • 4 Tbs. balsamic vinegar
  • 1 bunch basil, torn

Cook the shallots in oil. Add the garlic and cook until both are soft. Add the tomatoes and thyme. Turn the heat up and fry until the tomatoes are just starting to collapse. Add the beans and balsamic. Heat the beans and stir in the basil.
