This recipe offers a grown up twist on macaroni and hot dogs. The peppers and tomatoes elevate it, but kids will still find this pasta delicious. For an even cheesier version, top with another ½ cup of mozzarella before baking.

  • ½ C. onions, chopped
  • ½ C. green peppers, chopped
  • 1 Tbs. olive oil
  • 14 oz. canned tomatoes, diced
  • 8 oz tomato sauce
  • 4 hot dogs, chopped
  • 8 oz. penne pasta, cooked
  • 1 C. mozzarella cheese, shredded

Preheat oven to 375°F. Sauté peppers and onions in a large pan with olive oil. Cook till tender. Remove from heat and add tomatoes and sauce. Stir. Toss with pasta and cheese. Pour into a casserole dish and bake for 20 minutes or until cheese is melted.
