  • 2 cloves garlic, minced
  • 1 lb. chicken
  • 1 (14 oz.) can diced tomatoes, drained
  • 1 red bell pepper, chopped
  • ¼ C. balsamic vinaigrette dressing
  • Dash crushed red pepper flakes
  • ¼ C. Parmesan cheese, grated

Preheat oven to 425 degrees. In a greased baking dish, combine onion and garlic in a layer at the bottom. Place chicken pieces on top. In a bowl, combine tomatoes, red bell pepper, dressing, and red pepper flakes; pour over chicken. Sprinkle on Parmesan and bake for 30 to 40 minutes until chicken is tender and cooked through.
