  • 5 large eggs
  • 1 Tbs. heavy cream
  • 1/2 lb. mushrooms, sliced
  • 5 small zucchinis, sliced
  • 1 lb. Monterey Jack Cheese, shredded
  • 2 large tomatoes, sliced
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. garlic powder

Preheat oven at 350 degrees F. Use a mixer to beat eggs and heavy cream. Pour in casserole dish. Layer mushrooms, zucchinis and tomatoes. Spread cheese. Sprinkle remaining ingredients. Bake for 40 to 45 minutes.
