Tomato, Basil, and Mozzarella Salad with Balsamic Vinegar

- Chopped fresh basil, 1/4 cup
- Extra-virgin olive oil, 1/4 cup
- Mozzarella balls, 1 lb
- Cherry tomatoes, 2 cups
- Balsamic vinegar, 3 tbsp
- Kosher salt
- Black pepper
Take a medium bowl and combine the basil and the oil there. Add in the cheese balls and add pepper and salt to taste. Cover the bowl and marinate in the refrigerator for at least half an hour.
Take out the cheese and add balsamic vinegar (you can use either golden or the white balsamic vinegar, however the golden variety helps retain the color of the cheese better than the white vinegar) and the tomatoes to it. Add more pepper and salt and season to taste. Toss well to combine and serve.
