Tomato Basil Salad
Ingredients
- 8-9 tomatoes, sliced about 1/2-inch thick (30 slices)
- 1/2 C. very thin sliced red onion (half rings)
- 1/2 C. chopped fresh basil
- 1/2 C. apple cider vinegar (specialty vinegars may be used)
- 1 1/2 Tbs. extra virgin olive oil
- 1 tsp. sugar
- 1/2 tsp salt
Directions
Whisk together last five ingredients in a bowl. Arrange sliced tomatoes and onion in a 9x13 dish. Pour the other ingredients from the bowl over this. Chill and you have a yummy side dish. The longer this dish chills and marinates, the better it is, especially the next day.
