  • 1 lb. cheese tortellini
  • 10 tomatoes, diced
  • ¼ C. basil, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • ½ C. olive oil
  • Salt and pepper to taste
  • 1 C. mozzarella cheese

In a pot, heat tomatoes and basil until tomatoes soften. In a skillet, heat olive oil and saute onion and garlic until tender; transfer to tomato mixture. Season with salt and pepper and simmer for an hour until sauce thickens. In a greased baking dish, combine tortellini and sauce. Top with mozzarella and bake at 400 for 20 minutes.
