  • 2 Tbs olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 Tbs tomato paste
  • 2 diced tomatoes
  • 12 oz roasted red peppers
  • 2 1/2 C vegetable broth
  • 2 tsp sugar, optional
  • 1/2 C half-and-half
  • 1/4 C chopped fresh basil, plus more for garnish

Heat oil in saucepan over medium-high heat. Add onions, saute until tender. Add garlic and saute until just fragrant. Season with salt and pepper. Add tomato paste and cook for around 1 minute.

Add tomatoes, red peppers, and chicken broth and let simmer until the vegetables are tender and the flavors have melded together.Add half-and-half and basil, thenpuree until smooth.

Serve in soup bowls with fresh basil on top.
