  • 2 med. ripe tomatoes
  • 2 lg. garlic cloves, peeled
  • 1 Tbs. extra-virgin olive oil
  • 1/2 tsp. salt
  • freshly ground pepper
  • 4 lg. basil leaves
  • 1 baguette

Cut out stems on top of tomatoes. Cut tomatoes into quarter-inch slices. Cut slices into quarter-inch strips. Chop strips into quarter-inch squares. Put pieces in a mixing bowl. Chop garlic finely and add to tomatoes. Add olive oil, salt and pepper. Cut basil leaves crosswise into thin strips using scissors. Stir basil into tomatoes and let sit for 15 minutes. Slice bread into thin slices. Toast lightly. Spoon tomato mixture on top of each piece of bread. Serve immediately.
