  • 6 large zucchini, halved lengthwise
  • ½ cup onion, sliced
  • 1 cup marinara sauce
  • 1 cup, mozzarella cheese, shredded
  • 1 can tomatoes, drained
  • 2 tsp. garlic powder
  • 2 tsp. oregano
  • Salt, to taste
  • Pepper, to taste
  • Extra virgin olive oil

Preheat oven to 375 degrees
Scoop out some of the insides of the zucchini
Combine onion, marinara, tomatoes in a bowl. Season with salt, pepper, oregano and garlic powder. Mix well
Fill zucchini halves with marinara mixture and top with cheese. Place on greased baking dish and toss in oven. Allow cook-time of about 20 to 25 minutes (or until cheese is bubbly)
Remove from oven and let stand before serving
