Tomato Macaroni Soup

I came up with this recipe based on one of my favorite soups at a local restaurant - it's almost identical.

Ingredients

  • 1 lb. hamburger meat
  • 1 sm. onion, diced
  • 1 qt. water
  • 2 qt. tomato juice
  • 2 Tbs. brown sugar
  • 1 tsp. salt seasoning
  • 2 stalks celery, diced
  • 1 carrot, finely grated
  • 1Tbs. Worcestershire sauce
  • 1/2 C.green onion, chopped
  • 8 oz. uncooked elbow macaroni

Directions

Brown hamburger meat, drain, add onion and cook until onion is clear. Remove from pot. In a separate pot, cook macaroni according to package directions. Drain and set aside.

In the pot the meat was cooked in, add water, juice, brown sugar, season salt, celery, carrot and Worcestershire sauce. Bring to a boil and simmer 5-10 minutes. Add hamburger and green onion to juice. Cook another 5-10 minutes. Turn to simmer. Add cooked macaroni to juice and simmer another 5-10 minutes until juice gets into macaroni. Stir often after adding macaroni so it will not stick to the bottom of the pot.

  • The diced onion was mixed with the hamburger. If the hamburger goes back into the soup, the onion will go with it.

  • What do you do with the one small onion that you cooked with the hamburger meat? You only talk about returning the meat back to the soup mixture but nothing about the small onion.
