  • 4 slices sourdough bread
  • 2 tablespoons pesto
  • 4 thin slices fresh mozzarella
  • 1 tomato, slices
  • 6 fresh basil leaves
  • salt and pepper

Heat a panini press, or skillet, greased with non-stick spray. Put together the sandwiches, spreading the pesto on each slice of bread, topping it with cheese, tomato, salt, pepper, basil and the second slice of bread. Grill the sandwich for 3 minutes on each side, or until cheese melts and the bread becomes golden brown. Best served warm.
