  • 6 strips of bacon, cut into thirds
  • 1 Tbsp. butter
  • 1/2 yellow onion, chopped
  • 1/4 C. flour
  • 1 can diced tomatoes
  • 1/3 C. chicken stock
  • 2 tsp. sugar
  • 1 bay leaf
  • 1 C. heavy cream
  • Salt and pepper, to taste
  • Sour cream, for garnish

Heat a skillet over medium and cook the bacon until crisp. Drain on paper towels. Put in the butter and let it melt. Cook the onion until translucent and add the flour. Stir until thickened. Put the mixture into a crockpot and add the tomatoes, stock, sugar, pepper, and bay leaf. Cover and cook for 2 hours on low. Remove the bay leaf and add the heavy cream. Cook another 10 minutes. Blend the soup in the blender until smooth and season with salt and pepper. Serve with sour cream as a garnish.
