  • 1 eggplant, sliced
  • 4 tomatoes, sliced
  • 4 zucchinis, sliced
  • Parsley
  • Olive oil
  • Salt
  • Pepper
  • 1 garlic clove, minced

Wash and slice all the vegetables.  Place all the sliced veggies into a bowl and drizzle a little bit of olive oil on top.  Then add a few dashes of salt and pepper.  Finally top with parsley.  Layer on a nice platter and enjoy.
