These copycat cheesy fiesta potatoes will spice up any entrée you have planned. These potato bites are quick and easy to bake, and then drizzled with homemade cheese sauce, then topped with sour cream and green onions.

  • ½ tsp. garlic powder
  • ¼ tsp. ground cumin
  • 2 lb. Lg. Russet potatoes peeled and diced into bite size cubes
  • 2 T. unsalted butter
  • 1 T. olive oil
  • Salt and pepper to taste
  • 1 ¼ C. cubed cheese
  • ¼ salsa of your choice
  • Tabasco sauce or hot sauce to taste
  • ½ sour cream divided
  • 1 green onion diced. (Green part only)

Preheat oven to 475°F. In a mixing bowl mix combine the garlic powder and cumin together and toss the potatoes in this mixture until evenly coated. Heat a cast iron or heavy skillet over medium heat, melt the oil and butter together. Cook seasoned potatoes until golden brown. Cover skillet and let cook for ten more minutes. Season with salt and pepper to taste. Place cooked potatoes on a baking sheet and bake for ten minutes. Potatoes should be crispy. Melt cubed cheese, salsa and hot/tabasco sauce in a microwave bowl and heat for one minute. Stir and repeat until mixture is smooth. Take potatoes out when done and drizzle cheese sauce over each bowl serving. Top with sour cream and diced green onion. Serve warm.
