This amazing soup is great for the fall, but should be enjoyed year-round it’s so good! The tortellini noodles are perfect with the potato and pumpkin broth.

  • 1 tablespoon olive oil
  • 1 ½ cups cheese tortellini
  • 3 cups peeled and chopped pumpkin
  • 2 peeled and chopped potatoes
  • 1 liter chicken stock

Heat the oil in a large pan over medium heat and then add the pumpkin and potatoes. Cook and stir for 2 minutes. Add the chicken stock and raise the heat. Bring the pan to a boil, cover and cook for 15 minutes. Remove the pan from the heat and stir until smooth. Bring the pan back to the heat and add the tortellini. Cook for 5 minutes. Serve with French bread.
