Tortellini Salad

The mixture of tortellini pasta with roasted red peppers, black olives and a balsamic/olive oil dressing is sure to please anyone's stomach.

Ingredients

  • 2 lb. cooked tortellini, any flavor
  • 2 roasted red peppers, chopped
  • 1 C. sliced black olives
  • 1/4 C. balsamic vinegar
  • 2/3 C. extra virgin olive oil
  • Salt and pepper to taste

Directions

Mix first three ingredients in large bowl. In a small bowl, mix the rest of the ingredients.  Pour over tortellini and toss. Can be served at room temperature.
