Tortellini Salad
Ingredients
- 2 lb. cooked tortellini, any flavor
- 2 roasted red peppers, chopped
- 1 C. sliced black olives
- 1/4 C. balsamic vinegar
- 2/3 C. extra virgin olive oil
- Salt and pepper to taste
Directions
Mix first three ingredients in large bowl. In a small bowl, mix the rest of the ingredients. Pour over tortellini and toss. Can be served at room temperature.
