  • 1 large onion
  • 2 celery ribs
  • 2 Tbsp. canola oil
  • 2 cans beef broth
  • 1 cup each frozen corn, sliced carrots and cut green beans
  • 1 cup diced uncooked potatoes
  • 1 tsp. dried basil
  • 1 tsp. dried thyme
  • 1/2 tsp. minced chives
  • 2 cans diced tomatoes
  • 2 cups frozen beef or cheese tortellini

Using a soup kettle, sauté your onion and celery. Corn, broth, beans, potatoes, basil, thymes and chives; bring to a boil. Cook until potatoes are tender. Add in tomatoes and tortellini.
