  • 6oz can plain red beans
  • 2 flour tortilla
  • 1 C. diced tomatoes
  • 8oz of crab sticks, or 1 C. crab meat
  • 1 red pepper

Prepare all ingredients and the mixing bowl. Slice each crab stick in half lengthwise and then dice them in quarters. Slice red pepper in short strips, and fresh tomatoes in half and then each in quarters. Add all the sliced ingredients to the mixing bowl. Rinse red beans of a liquid in can. Mix all the ingredients with the beans thoroughly, add mayo to taste. Spread about 1/2 of the mixture over one side of each tortilla. Tightly roll tortilla up. Repeat with remaining tortillas. To serve, cut each tortilla roll into 3 inch slices and top with fresh greens.
