Ingredients

  • 1 chopped onion
  • 3 minced garlic cloves
  • 1 can crushed tomatoes
  • 1 can condensed chicken broth
  • 1 ¼ cups water
  • 1 cup cooked corn kernels
  • 2 can black beans
  • ¼ cup chopped cilantro
  • 2 boneless chicken breast halves, cut into bite sized pieces
  • Shredded cheddar cheese
  • Crushed tortilla chips
  • 1 tablespoon olive oil
  • 3 teaspoons chili powder

Directions

Heat the oil over medium heat in a large pot and cook the onion and garlic until soft. Add the chili powder, oregano, broth, water, and tomatoes. Stir and then bring the pot to a boil. Simmer for 10 minutes and then stir in the corn, beans, chicken and cilantro. Simmer for 10 minutes more. Distribute the soup into serving bowls and top with shredded cheese and crushed tortilla chips.
