  • 4 boneless chicken breasts, cooked and shredded
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • Salt and pepper to taste
  • 1 C. sweet corn, chopped
  • 1 (4 oz.) can green chilies, drained and chopped
  • 1 (16 oz.) container sour cream
  • ¾ C. barbecue sauce
  • 3 C. Monterrey Jack cheese, shredded
  • Flour tortillas
  • Oil for frying

In a large skillet, heat a tablespoon of oil and sauté onion, garlic, and red bell pepper until softened. Briefly add in corn and chilies to sauté; season with chili powder, cumin, salt, and pepper. Transfer to a large bowl and combine with cooked shredded chicken, sour cream, barbecue sauce, and cheese. Heat about ¼ cup of frying oil until bubbly. Spoon mixture onto tortillas, roll them up, secure with a toothpick, and fry until golden on all sides and warm throughout.
