  • 2 bags frozen corn, thawed
  • 1 red bell pepper
  • 1 red onion
  • 1 cup distilled white vinegar
  • 1/4 cup water
  • 3/4 cup sugar
  • 1 teaspoon ground mustard
  • 2 teaspoons cayenne pepper
  • Salt and pepper, to taste

Finely chop the bell pepper and onion. Mix together the vegetables in a large bowl and slowly pour in the vinegar, then the water and sugar. Add in the spices and toss. Let your corn salsa refrigerate overnight and serve the next day.
