Trader Joe's Copycat Eggplant Parmesan

- 1 package of Trader Joe's Frozen Eggplant cutlets
- 2 1/2 cups shredded mozzarella
- 1/4 cup parmesan cheese
- 1 jar pasta sauce
Preheat your oven to 375 degrees. Take a glass, 9 x 13 baking dish and pour 1/4 of the sauce at the bottom. Then, place a layer of eggplant, and cover with both cheeses and sauce. Place the rest of the eggplant in another layer on top, and then pour the rest of the sauce and cheese on top, sprinkling the parmesan on top last.
Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bring the heat up to 500 and cook for another 10 minutes. Serve immediately with pasta or whatever sides you enjoy.
