  • 8 T. margarine
  • 1/2 C. white sugar
  • 1/4 C. light brown sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 1/2 C. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 C. chocolate chips

Preheat the oven to 350 degrees Fahrenheit. Microwave the margarine for about 40 seconds to just barely melt it.
Use an electric beater to beat the margarine with the sugars until creamy. Add the vanilla and the egg, then beat on low speed until just incorporated
Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. Add the chocolate chips and blend with your hands.
Roll the dough into 12 large balls and place on a cookie sheet. Bake for about 10 minutes until the cookies look puffy and a bit golden. Careful not to over bake.
Let them cool on the pan for 30 minutes, then serve and enjoy.
